Insalatina in pasta fillo – Phyllo salad


When it is summer, nobody loves to spend time cooking. So it happens that the fast-dinner becomes a   fresh salads. But to make them boring, I always try to make them look different and attractive to  both the eyes and the palate.
Dedicated to those who think that salad means only green leaves 🙂

Ingredients for 2 people 

  • 3 sheets of pasta phillo 
  • carpaccio with mushrooms (I used Rocca) 
  • some cherry tomatoes
  • 1 mango 
  • oiled flaxseeds (I used Melandri Gaudenzio)
  • a few slices of cucumber 

vinaigrette

  • juice of half lime 
  • chives
  • juice of half a mango
  • sea salt

Put together three sheets of phyllo, cutted into 10×10 cm squares and brush the surface with some oil. Place them on a holster oven,  to give the shape them in the shape of the basket and place them on a baking sheet, bake at 180°C for a few minutes, just long enough to get them gold. Now place the phyllo basket on a plate.
After having washed and dried them, cut vegetables. Prepare the vinaigrette you will use for dressing the salad.
Mix all ingredients and place the salad into the basket. Garnish with some oiled flaxseed.

Insalatina estiva in pasta fillo o phyllo


Quando è estate, chi di noi ha voglia di cucinare?
Capita che le cene, in queste serate ancora calde,  diventino delle veloci insalatone, ma per non far storcere il naso dei compagni e mariti, le dobbiamo creare sempre sempre diverse ed appetibili prima con gli occhi e poi con il palato.
Dedicato a chi pensa che insalata significhi solo foglie verdi 🙂

Ingredienti per 2 persone

  • 3 fogli di pasta phillo
  • carpaccio di funghi porcini (io ho usato Rocca)
  • qualche pomodirno ciliega
  • semi di lino ( io ho usato Melandri Gaudenzio)
  • 1 mango 
  • qualche fettina di cetriolo

vinaigrette:

  • succo di mezzo lime
  • erba cipollina
  • fior di sal di cipro
  • succo di mezzo mango

Appoggiate uno sull’altro i tre fogli di pasta fillo, tagliateli in quadrati 10×10 cm e spennellate la superficie con un po’ d’olio. Adagiateli sull’ esterno di una cocottina da forno, in modo da dare la forma del cestino e poneteli su una teglia, infornate a 180° per qualche minuto, giusto il tempo per fargli prendere un po’ di colore.
Adesso su un piatto di portata adagiate il cestino di pasta fillo.
Dopo aver lavato, asciugato e tagliato le verdure, preparate la vinagrette con la quale condirete l’insalatina.
Mescolate tutte gli ingredienti e sistemate l’insalata nel cestino, guarnendo il piatto con qualche seme di lino.
