Tartufini al cioccolato

Ingredienti:
– 150g di cioccolato fondente
– 150ml di panna
– 60g di zucchero di canna
– 50g di farina di cocco
– pepe rosa in grani q.b.
– rum q.b.
– 1 limone
– basilico q.b.
– zucchero a velo q.b.
– 30g di mandorle a scaglie
– cannella in polvere q.b.
cacao amaro in polvere q.b.

Questa è una di quelle ricette semplici, che tutti conoscono, ma che forse dovremmo tenere più in considerazione, per quelle sere in cui abbiamo ospiti a sorpresa e vogliamo regalar loro momenti di fresca dolcezza.
Dico che è una ricetta semplice, perchè è senza cottura, ci sono 3 ingredienti in croce e funziona bene con qualsiasi variante.
Le dosi sono un pochino ad occhio. La ricotta può essere sostituita da un mascarpone o metà ricotta e metà yogurt greco o con la panna.

Ingredienti per 30 tartufini

  • 150 gr. di cioccolato fondente 
  • 100 gr. di ricotta cremosa
  • (se il cioccolato è molto amaro aggiungete un cucchio di zucchero di canna)

le varianti:

  • una manciata di cocco essiccato
  • peperoncino in polvere
  • cacao
  • pistacchi tritati
Sciogliete a bagnomaria il cioccolato. Toglietelo dal fuoco e lavoratelo con la ricotta, se occorre unite un cucchiaio di zucchero, fino a che non otterrete un bel composto. Trasferite una mezz’oretta in frigo per renderlo più denso.  Dividete il composto in 3 parti.
Nella prima aggiungete il peperoncino in polvere, poco per volta, assaggiando spesso…(senza finirlo possibilmente!)
Nel secondo aggiungete dei pistacchi tritati grossolanamente.
Il terzo lasciatelo “nature”.
Iniziate a fare le palline con le mani, come solitamente fate con le polpette. Quelli al peperoncino rivestiteli di cacao amaro.  Quelle naturali di cocco. E infine quelle ai pistacchi con i pistacchi stessi.
Rimettetele in frigo, mangiandone qualcuna ogni 3 minuti, soddisfatta 🙂

This is a very silly recipe, which everyone knows, and that we should keep in mind when we have  guests and we want give them something sweet.
There’s no need to cook or bake it, the ingredients are very few and the recipe works well with any variant your fantasy could suggest.
The ricotta cheese can be substituted by mascarpone cheese, or by whipping cream.
Ingredients for 30 truffles ____________________________________________________________________
  • 150 gr. dark chocolate
  • 100 gr. creamy ricotta
  • a handful of dried coconut
  • chili powder
  • cocoa
  • chopped pistachios
Melt the chocolate a bain marie. Remove from heat and knead it with the ricotta, if  it is too bitter feel free to add a tablespoon of sugar and when you  get a nice mixture, put it in the  fridge to make it more dense for about 30 minuts. Divide the mixture into 3 parts.
In the first add the chili powder, little by little, tasting often … 
In the second add the coarsely chopped pistachios.
The third  leave it “normal”.
Start to make the balls with your hands or help yourself with a tea spoon. Garnish the chilly ones with the cocoa powder. The natural ones with dried coconut. And finally those with pistachios,  with pistachios themselves.
Put them back in the fridge.
